Follow The Directions

01

Step

In a medium bowl, whisk together the Greek yogurt, lime juice, and cilantro until smooth. Set aside. (5 minutes)

02

Step

Melt the butter in a large skillet over medium heat. Add the drained corn, chopped jalapeño, chili powder, garlic powder, cumin, and salt. Cook, stirring occasionally, until the corn begins to brown and caramelize, about 7-8 minutes. (8 minutes)

03

Step

Remove the skillet from the heat and stir in the yogurt mixture and crumbled cotija cheese. Mix well to combine, ensuring the cheese is evenly distributed. (2 minutes)

04

Step

Transfer the dip to a serving dish and garnish with additional cilantro and cotija cheese. Serve immediately with tortilla chips or your favorite dippers, or keep warm in a slow cooker until ready to serve.

For a smoky depth of flavor, try grilling the corn kernels before adding them to the skillet.
Adjust the amount of jalapeño to your preference for heat.
If you don't have cotija cheese, feta cheese makes a great substitute.
This dip can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently before serving.
